Day 1 : Arrival

Location: Salento Airport

Accommodation: Double or Single Room at the Farmhouse

Meals Included: Dinner

Arrival at the Airport. We will pick up you and take you to the farmhouse.
After a small break we make a tour of the farmhouse and an explanation of how do the oil (at that time may not see as is Hara because the season is from October to January) visit to the mill where Emilio explain all the procedure (we use the traditional procedure) and oil tasting.
Dinner at the farmhouse with typical food from Salento, such as biological vegetables directly collected from the farmhouse.

Day 2 : Castro, Santa Maria Di Leuca

Location: Santa Maria di Leuca,, Castro, Marina Serra

Breakfast., tour of the Adriatic coast with stops at the Acquaviva marina, Marina Sierra, Castro, visit of the historic centre of Castro and free time in Castro to eat or possibility of bathing / afternoon tour to Santa Maria di Leuca with stop at Ciolo bridge, the town is the eastest town of Italy, return to the farmhouse. Time at leisure.
Dinner based on fish dishes typically cooked traditionally.

Day 3 : Gallipoli,Lecce

Location: Gallipoli, Lecce, Lecce

Breakfast. Excursion along the Ionian coast and visit of Gallipoli. Gallipoli is a coastal town in Apulia, southern Italy. The historic centre, on an island off the mainland, shelters churches like St. Agatha’s Cathedral, with its ornate facade. Nearby, the Church of St. Mary of Purity has a maiolica tiled floor. Gallipoli Castle includes the Rivellino tower, standing apart from the main building. Across the bridge, on the mainland, is the Greek Fountain, dating from the Renaissance. Free time and return to the farm to rest. In the afternoon visit of Lecce, the pearl of the Baroque, with a professional guide and dinner in a typical Neapolitan pizzeria to try the real Italian pizza.

Day 4 : Alberobello, Ostuni

Location: Alberobello, Ostuni, Ostuni, Ostuni centro urbano storico, Specchia

Departure to the Valle d' Itria, and Visit of the charming town of Alberobello (with a professional guide)a unique town with traditional white houses called " Trulli” and listed as UNESCO World Heritage Site, for the uniqueness of the landscape, and of the historic buildings that once served as storage and housing for the local population. Free time for shopping.Pick nick lunch. In the afternoon departure to Ostuni, a popular summer resort town, with a beautiful city centre and called also the White City for the colour of its buildings. Guided tour of the town. Day 5 : Maglie, Gastronomic Tour, Cooking Class

Location: Maglie, Province of Lecce

Breakfast, visit to Maglie and of the most important agro-food artisan workshops in the area, including a pasta factory, a mozzarella cheese factory where to try the famous Burrata and a chocolate workshop. Free time at Maglie / afternoon wine tasting in a historic cellar in the area, return to the farm and Cooking class with chef Emilio, explication and preparation of typical “homemade pasta salentina” and Italian fresh pasta). Day 6 : Otranto

Location: Otranto, Porto Badisco, Porto Miggiano, Grotta Zinzulusa

After Breakfast. We depart for a tour of the Adriatic coast with stop in Otranto, home to the 15th-century Aragonese Castle and 11th-century Otranto Cathedral, with a rose window and ornate mosaic flooring. At the harbour, Torre Matta tower has sweeping sea views. Relative visit of the city, free time to eat and possibility of bathing in the sea, short stops also at the bay of Orte, Porto Badisco and Porto Miggiano followed by a visit of the Zinzulusa Cave (prehistoric cave on the sea) return to the farmhouse and farewell dinner. Day 7 : Matera

Day 8 : Matera

After breakfast meeting with your local guide for a guided tour of the Sassi Area. The old town’s Sassi are formed by two districts slotted in adjoining pits, Sasso Barisano and Sasso Caveoso. In between stands the elegant cathedral, which looks out over the gorge. Rock-cut dwellings are scattered all around, often grouped around small squares called vicinato (‘neighbourhood’). These distinctive abodes are representative of the way of life for the city’s inhabitants until around the 1980s (by which point most inhabitants had been forcibly resettled or the dwellings modernised), some of which date back millennia.
The afternoon is at leisure. Dinner at your own in Matera.

Day 9 : Matera

Breakfast and departure by private car to the Park of the Murgia to find out about local medicinal plants, The UNESCO World Heritage–listed Murgia Materana Park is one of the most important attractions in the region of Basilicata. Located near the Sassi di Matera, the park is famous for its prehistoric sites, rupestrian churches, and varied wildlife—and is a fascinating testament to the historic relationship between humans and nature.
Visit to a winery followed by wine tasting. Experiential lab on how to prepare essential oils, infusions form the local medicinal plants. Farewell dinner at a local restaurant.

The Taste of Salento trip was an AMAZING experience. The olive farm is beautiful and the accommodations were beyond my expectations. The tour is well planned and organised. Carla and Emilio are the absolute BEST hostess/host. If you are looking for a week of relaxation, beautiful historic sites and authentic Italian cuisine; this is the trip for you. I enjoyed the tour so much that I plan to go again in 2020.

Amazing Tour

It was a tour different from others we have taken before. A simple but cosy B&B in a rural area where owners are very friendly and make whatever it takes to please guests. Chef Emilio prepared delicious dishes and explained not only how they were prepared but also history and traditions of behind every plate. Antonio (Emilio's father) is very friendly and talkative and have welcomed us at the airport and was our tour guide in some of our explorations of Salento area. And there is Pongo, a german shepherd, black and tan, that was always ready to go along with guest whenever they take a tour around the property. A sweet giant, and we already miss him... Carlo, the professional guide, is very knowledgeable about history of Salento and Italy in general, and we are very happy to have him with us in Lecce, Galipolli and Alberobelo. All in all, an excellent tour.

Recommended Tour ,Wonderful Matera

This was a great experience. What made this tour unique was that it included private transportation to many places not normally included in tours. We feel we have a good idea now about what the Salento region has to offer. Emilio and Clara were excellent hosts. We learned about olive oil production, visited a winery, an artisan pasta plant, and a ceramics factory. The meals at the Masseria reflected local cuisine and were delicious. Excursions included Lecce, Alberobello, Ostuni, Gallipoli, Castro, Tricase and several others. After a week in Salento, we were driven to Matera which is an amazing place, somewhat other-worldly. Numerous movies were filmed there. Our hotel was the most unusual place we will ever stay in. It was a former cave beautifully repurposed. Interestingly, we appeared to be the only American tourists wherever we were on this trip. I highly recommend this tour.

I travelled with my 24 yo daughter on this tour in late January. We really enjoyed this experience! Plenty of activity and flexibility. It was an opportunity to see in-depth a beautiful and unusual part of Italy, learn about some history and culture and experience their way of life.
